Pasta Genovese Recipe

Pasta Genovese recipe is my mom’s from when she worked at a fancy Italian restaurant way back in the day. She changed it up and made it one of my favorite comforting pasta recipes.

Ingredients

  • 3 tbsp minced garlic

  • 1 stick of butter

  • 2 cans (16 oz each) diced tomatoes

  • 1 (7 oz) can sliced black olives (drained)

  • 1 can quartered artichoke hearts (drained and diced)

  • ¼ tsp each salt and pepper

  • 8 oz Mostaccioli noodles

Melt butter in a large pot then add garlic. Cook until fragrant and golden then add  the rest of the sauce ingredients. Simmer for 30 minutes, stirring frequently. While that is simmering, boil a large pot of salted water and cook 8 oz of mostaccioli noodles until al dente (10-11 min). Drain the pasta then add sauce to pasta in the large pot. Stir and simmer for an additional 5 minutes then enjoy!
