Brownie Stuffed Chocolate Chip Cookies
If you’re a chocolate lover like me then this brownie stuffed chocolate chip cookie recipe is for you! All the brownie goodness stuffed inside some melty chocolate chip cookies - yum! These turned out even better than I had hoped and I hope your family loves them as much as mine did!
Ingredients:
Chocolate Chip Cookie Dough
1 cup salted butter (softened)
2/3 cup white sugar
2/3 cup brown sugar
2 teaspoons vanilla
2 eggs
3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chocolate chips
Brownie Batter
1/3 cup vegetable oil
2/3 cup sugar
1 egg
1/2 teaspoon vanilla
1/3 cup cocoa powder
1/2 cup flour
Brownie Stuffed Chocolate Chip Cookies Directions:
To make Brownie stuffed chocolate chip cookies you make your two dough/batter recipes then stuff your chocolate chip cookies with your brownie batter before baking. I recommend starting with the chocolate chip cookie dough and putting it in the refrigerator while you work on your brownie batter.
Chocolate Chip Cookie Dough Directions:
Cream together your sugars and softened butter in a bowl then add the vanilla and eggs. Once fully combined, add flour, baking soda and salt. Beat for 2-3 minutes then fold in chocolate chips. Refrigerate cookie dough while you make the brownie batter.
Brownie Batter Directions:
Mix egg, oil, and vanilla in a bowl until combined. Stir in sugar then flour and cocoa powder. Refrigerate until ready to bake.
Stuff Your Cookies
To form your stuffed cookies, flatten about 1/4 cup of chocolate chip cookie dough in your palm then roll a 1/2 inch ball of brownie dough to put in the center. Fold your cookie dough around the brownie ball and pinch to cover the chocolate brownie mixture.
Bake Your Stuffed Cookies
Once your brownie stuffed cookie balls are formed, space them 3 inches apart on a parchment paper lined cookie sheet. Bake at 350 degrees for 13-15 minutes then leave on pan an additional 2 minutes after baking before transferring to a cooling rack.
