Creamy Lemon Chicken Pasta
This creamy lemon chicken pasta recipe was created when I was having intense cravings for Katie’s Pizza and Pasta Lemon Paccheri. I wanted that lemony, garlicky goodness with a little protein kick from some chicken. I think it turned out great but let me know what you think!
Ingredients:
2 chicken breasts
2 tablespoon olive oil
16 oz. rigatoni noodles
2 cups heavy cream
1/2 cup grated parmesan cheese
1 tablespoon flour
1 tablespoon minced garlic (or 3 cloves)
1 tablespoon lemon juice
Lemon zest from 1 large lemon
1/3 cup reserved pasta water
1/2 teaspoon salt
1/2 teaspoon pepper
Directions:
Chop up your two chicken breasts into bite size pieces and saute in 1 tablespoon of olive oil until cooked through. While your chicken is cooking boil a pot of salted water and add your rigatoni noodles. After your chicken is cooked, set aside in a bowl. Using the chicken pan add another tablespoon of olive oil and saute your garlic until fragrant (about 3 minutes). Whisk in your tablespoon of flour along with your lemon juice and zest. Once combined, add your 1/3 cup of salted pasta water and 2 cups of heavy cream. Add the chicken back to the pan along with the salt and pepper. Remove your pan from the heat and add your parmesan cheese. Stir until combined then add your cooked rigatoni noodles. Serve your creamy lemon chicken pasta with your favorite veggie side dish and enjoy!
