Easy Mini Quiche Recipe

Mini quiches

Ingredients:

  • 1 can biscuits

  • 8 large eggs

  • 1 red or orange bell pepper (chopped)

  • 1/2 onion (chopped)

  • 1/3 c. cheddar cheese (shredded)

  • 1/2 tsp. salt

  • 1/4 tsp. pepper

Preheat oven to 325°. Sauté pepper and onion until soft and slightly browned. Press 1 biscuit into each muffin cup, making sure it covers the whole inside of the cup. Add sautéed veggies to a bowl with the eggs, salt, and cheese and mix well. Pour mixture into each lined muffin cup and fill 3/4 full. Bake for 20 min at 325° or until the tops are firm.
