Pumpkin Apple Muffin Recipe

This pumpkin apple muffin recipe came to me from my mother who is a fantastic cook. These muffins are a great snack or breakfast on the go and I especially love making them in the fall when everything is pumpkin flavored. This recipe will make approx 24 small muffins (or 12 large).

Pumpkin Apple Muffins
  • Dry Ingredients:

    • 2 1/2 c. Flour

    • 2 c. Sugar

    • 2 1/2 tsp. Cinnamon

    • 1/2 tsp. Ginger

    • 1/4 tsp. Cloves

    • 1 tsp. Baking soda

    • 1/2 tsp. Salt

  • Wet Ingredients:

    • 2 eggs

    • 2 c. canned pumpkin

    • 1/4 c. canola oil

    • 1 c. chopped green apple

Preheat oven to 350°. Grease and flour muffin tins (or use Pam nonstick spray). Mix dry ingredients in a large bowl. Mix wet ingredients in a separate bowl then add to dry. Once mixture is combined, fill muffin tins 2/3 full. Bake for 25-30 min or until tops are firm.
